Spicy Chicken

This recipe I found on an instagram post. I do not remember which one :(. Its simple and healthy and yumm!

Ingredients:
  • Boneless Chicken
  • Tomato Puree
  • Coriander leaves - chopped
  • Dried fenugreek leaves or any other 
  • Salt and Pepper
  • Chilli Flakes
  • Coriander powder
  • Paprika
  • Lemon Juice
  • Olive oil 
Method:
  1. Marinate chicken with all the ingredients for 30 mins or more
  2. Heat oil in a pan, add the chicken and stir fry for a few mins (I added more tomato puree so did not add any water - you could use less puree and add very little water)
  3. Cover with the lid and let it cook for about 15-20 mins on low heat 
  4. You can serve it with roti or rice or just eat it by itself!

Butter Garlic Shrimp Fried Rice

This recipe is courtesy my dear friend Sheetal Kotha! 

Ingredients:
  • Shrimp 
  • Butter
  • Garlic pods - finely chopped 
  • Eggs - 2 / 3 
  • Salt and Pepper
  • Soya Sauce 
  • Turmeric
  • Green Chillies
  • Chillie sauce 
Method:
  1. Scramble eggs and keep aside
  2. Cook rice and keep aside
  3. Heat butter and add the garlic and green chillies
  4. Fry until garlic is golden brown
  5. To this add the shrimp and let it cook
  6. Add salt and a pinch of turmeric and follow it up with soya sauce and chillie sauce
  7. Fry this mixture for a minute or two
  8. Now add the scrambled eggs and cooked rice
  9. Mix well.. add additional salt and pepper as required 
  10. Voila! Its all done!! ready to eat! 

PS: you can also add additional sauces or garlic powder as per your liking! 



Why this Blog?

I have often struggled to cook and am not really a great cook either. I can cook some..  but not the greatest. So I been looking for simple and easy recipes that are also healthy and well some.. not very ! I am blogging some recipes that I found and some are home recipes (from my mother).. just in case it can help anyone else too!
